Boiling water (100 °C / 212 °F) is perfect for hardy roots and seeds. But delicate flowers and some leaves release bitter or astringent compounds at full boil — slightly cooler water draws out the pleasant aromatic notes instead.

Let freshly boiled water rest for 1–2 minutes to drop roughly 5–8 °C. For a bigger drop, pour between two vessels once or twice — each transfer loses around 5 °C more.

Yes — water boils at lower temperatures at altitude. At 2,000 m it boils around 93 °C rather than 100 °C. The calculator shows sea-level targets; at high elevation you may need to steep a little longer to compensate.

For blends, use the temperature that suits the most delicate ingredient. You can always steep the tougher botanicals separately and combine the infusions.
